5 lunches that do not require a stove or oven

To have a lunch you do not necessarily need the heat of a stove or oven, there are several recipes that you can make without cooking. In addition to sandwiches, there are also other simple, tasty and light preparations.

Salads are a classic dish for which you do not need an oven or stove.

Ingredients (2 servings): 1 cup of cooked corn kernels, 1 cup of cooked black beans , 2 tablespoons chili or bell pepper, 2 tablespoons coriander leaves, 1 tablespoon apple cider vinegar and 1 teaspoon vegetable oil.

Preparation: Drain the corn kernels and beans, chop the cilantro, chili and then mix all the ingredients in a bowl.

Ceviche is a preparation for which you require few ingredients and it is quick to prepare.

Ingredients (4 people): 1/2 kg of shrimp, peeled and cleaned, 2 tablespoons of olive oil, 1/2 cup of lemon juice , 3 diced seedless tomatoes, 1/2 diced seedless cucumber, 1/2 chopped red onion, 2 chopped serrano peppers, 2 tablespoons cilantro, salt and pepper to taste.

Preparation: In a bowl, mix the shrimp , olive oil and lemon juice. Add the rest of the ingredients, salt and pepper and mix. Accompany your ceviche with toast, tortilla chips or crackers. To avoid the risk of food poisoning, use cooked shrimp.

3. Lettuce wraps with beans and tuna

For this burrito variant you don’t need tortillas. It is a very simple, nutritious and healthy preparation, loaded with fiber and protein and good fats.

Ingredients (4 portions): 1 can ( ounces) of tuna in water, 1 can (15 ounces) cannellini beans, 1/4 cup chopped red onion, 1 medium ripe avocado, sliced, 12 lettuce leaves, 1 tablespoon chopped fresh parsley, 2 tablespoons olive oil, and a pinch of salt and pepper.

Preparation: Combine tuna, beans, onion , parsley, olive oil and seasonings. Serve on the lettuce leaves and cover with the small pieces of avocado

4. Gazpacho

Gazpacho is a cold soup of tomato. It is a classic Spanish soup that is very simple to prepare. It is ideal for refreshing yourself in the summer, but there is no rule that prevents you from enjoying it throughout the year. Here is an easy gazpacho recipe for which you only need tomato, pepper, cucumber, garlic, onion, bread, vinegar, olive oil and salt.

5. Tuna and cabbage salad

Canned tuna is good source of vitamins, minerals and fatty acids. It is a very practical food that you can enjoy in a variety of salads, such as coleslaw.

Ingredients (2 servings): 1 can of tuna in water, 2 cups of chopped cabbage, 1/4 cup of chopped onion, 1 tablespoon of mayonnaise, 2 tablespoons of natural yogurt, salt and pepper.

Preparation: Drain and crumble the tuna. Mix the tuna with the cabbage and add the onion, mayonnaise and yogurt. Season with salt and pepper to taste.
